Pimientos de Padron chillies are a small sweet Spanish heirloom from Galicia. Around 1 in 10 harvested Padron chillies are really hot and the remainder have little heat, you can harvest the fruits once they are fully grown but still green.

Pimientos de Padron chillies mature from green to red, horn shaped and some get hotter as they mature, but which ones?

Excellent for Tapas, stir fries, stuffed, grilled or fried whole in olive oil. They are usually pan fried with a pinch of salt and eaten by holding the stalk. Watch out for the hot one! It makes a fun game of chilli roulette :)

Heat Rating : 1,000 to 12,000 Scoville Units. What is a scoville unit?
